That depends mate. If you want to use the on board graphics the 780g boards seem to be popular, otherwise pretty much any mobo will do if you pair it with a 3xxx/4xxx ATI graphics card
These HTPC threads seem to be just me and you dont they! Some of the ATI cards have HDMI on the card but the mobo may not have 7.1 audio and the cards dont either afaik. The 780g will be your best bet
+1 for 780, some gigabyte makes have 6 channel sound and hdmi on them, on board graphics are extremely overclockable too if you wanted a tiny bit more power, mATX ones are around £50/60 now
