Hey guys im almost ready to start ordering, can you guys check over this spec and let me know if ive missed anything out ( its my first ever build) or if i should upgrade something

here goes:
mobo : gigabyte ex58-ud5
CPU: core i7 920
CPU fan: Noctua NH-U12P SE1366 (Socket LGA1366)
RAM: 6GB corsair dominator tripple channel DDR3
HDD: WD Caviar black 1TB SATA-II 32MB Cache - OEM (WD1001FALS)
wireless card :Intel (WM3945AGM2WB) 802.11a/g/b Wireless Adapter
optical drive: Samsung SH-S223F/RSMN 22x DVD±RW SATA Dual Layer ReWriter
monitor: Samsung SM-2233BW Cream 22" Widescreen LCD Monitor
GRaphics card: saphire ati hd radeon 4850
case : antec 300

i also need a recomendation for a PSU (750w i was thinking),

I think ive got it all, but am still unsure about the mobo ( whether or not to get the extreme or ud5) i wont be water cooling so is there any difference between ud5 and extreme except for there is support for water cooling with the extreme?

Also personaly I would go for a Sythe Fan set instead of the noctua.
Another comment the antec 300 isn't one of the largest cases around I would double check the size to make sure your GFX card will fit in it.

sythe dont seem to make a 1366 socket fan
 
about mobos: yes, GA-EX58-Extreme has water block for chipset, while GA-EX58-UD5 doesn't. and it seems to be the difference. So in your situation UD5 is better choice.
