Yeah it would work well with either board, i might be best if you so with the Gigabyte board as you have the chance to crossfire in the future if you want
 
I don't think any of the H55 boards do true crossfire.

They only run the second slot at 4X
 
dont get a H55 board, get a P55

the H55 has on-board graphics (which you dont need, right?), but it eats your pci-e lanes

i think the GA-P55-UD5 is the first in the P55 series w/ x8,x8 pci-e slots (which is good for xf/sli)
 
The H55 allows you to utilise the on board gpu on the i3 & some i5 cpu's. The board it's self does not have the gpu.
 
A quick check of the specification page of the GA-P55-UD5 says.

The first slot runs at 16X
The second slot runs at 8X
The third slot runs at 4X

It actually doesn't say what happens under dual card mode.
 
Looks like the gigabyte board is the better choice.

I am aware of the onboard video (as such) and no it probably won't be used but it is as stated only through the cpu.

Crossfire won't be used either as i think when more funds become available the vid card will probably be upgraded.
