Chicken and Chorizo wraps

Made this one up last night for some meaty goodness before I went out on a beer binge.

Get some chorizo cut it up in anyway shape or form and throw it in a bowl. Roughly a handful of the good stuff.

Get a chicken breast and slice it up and throw that in the bowl.

Them add about a tbsp of paprika and half a tbsp of cumin. Pour over a glug of olive oil.

Mix it all together.

Put your pan on a high heat and pour your chicken mixture in to fry.

Whilst thats working its magic (stir occasionally), prep your tortillas by nuking them in the microwave or whatever works for you.

Once chicken is cooked through, transfer to your wrap. Add in some sauce of some sort. I went for sour cream and chive.

voila!

Was beautiful.
 
It's these kind of recipes that make it really hard to comprehend why some people can't/won't cook. So easy! I love chorizo, it's a miracle ingredient.

I'd be tempted to go the whole fajita-hog and add some onion and pepper, maybe some crunchy lettuce too. Nice :cool:
 
Winning combo tbh. Needs fried onion, pepper, aubergine, garlic, chilli and a damn good slathering of houmous :D

Your recipe and your idea and you cook it how you want to, but I can't see why you'd want to add more paprika to a dish with chorizo in it.

If it were me, I'd cube and fry the chorizo off first and then fry the chicken (sprinkled with cumin, if that's your taste) in the chorizo oil which will be full of paprika and other lovely spices. That also ought to cut down on the greasiness of the end result.

I'd agree with Scam about the simplicity of this dish. Taking nothing away from your creativeness, it's such a simple recipe that almost anyone could and should be able to replicate it. Although it could certainly do with something crunchy in the wrap with the meat - I'd go with shredded lettuce to go with the sour cream.

I just don't understand houmous. I find it really bland and the texture feels wrong.

Maybe I'm eating the wrong stuff. :p
 
That is pretty much what I had for lunch today.
I add chickpeas as well to mine for a bit of a different texture.

Cooked up some chicken thighs with some diced onion and the chorizo.
Deglazed the pan with some sherry (makes a big difference to the flavour)
Then added some crushed garlic, dried chilli flakes, the chickpeas and some sliced roasted red peppers.

I had it on a wrap today with some cream cheese and sliced spring onions. Great lunch.
 
Yeah I was all out of veg I'm afraid otherwise I'd have had some fried red onion in there and/or some orange/yellow/red pepper as well.

As for the additional paprika, the only chorizo I had was the sandwich slices. So the quality obviously isn't as nice as a proper chorizo sausage. If I'd had that I may have skipped it.

The cumin/paprika combo is a bit of a fajita style spice mix as it is. Usually a little more chilli/cayenne pepper for some more spice and a squeeze of lime juice as well.

Ultimately though, just the chorizo and chicken itself are just such simpl ingredients. The former just brings anything to life and as a few of you have said, it's so simple it's pretty much idiot proof.

In borough market they actually have this chorizo roll stall. They literally just fry chorizo, stick it in a rustic ciabatta type roll with roquillo pepper and some rocket salad. It's so simple yet so perfect.

Are you eating diet humous or anything like that? Those kind of suck. Try out red pepper humous from sainsburys. As supermarket humous goes, it's amongst the best :)
