Chicken Shish Kebab Marinade.

Hello, I'm hoping someone can help!

I'm looking for a decent tried and tested recipe for a marinade to make chicken shish kebabs similar to ones you would buy in a kebab shop... If anyone has a good recipe, please can you post it here? :):)

I've seen a few on the internet already, but they vary so much it's difficult to choose one!

Here is a recipe I use all the time. It is amazing and very easy. Works expecially well with diced chicken breast (cook on skewers), but can be used with any cut. 24 hours then onto the BBQ.

This is for a lot of chicken, and the recipe and be played with -

500ml of low fat natural yoghurt.
1 table spoon of garam masala
1 table spoon of chilli powder
Juice of two limes, put the zest in as well if you like it limey.
3 fresh chillies
Large sprig of coriander, chopped.

I usually use a whole packet of coariander as I love the stuff. The reason there is fresh chilli and chilli poweder is that I have found it tastes better than just one or the other.
 
That recipe looks good, but I don't think the end result will be Turkish style kebab, more an indian style tandoori recipe... Will give it a try though.. has anyone else any ideas? Thanks!
 
That recipe I use is amazing, but is an Indian style rather than Turkish.

I would love to know the simple Turkish marinades. Love Turkish food and just got back from a week in Kas, where I ate kebab after kebab. :D
 
Here is one I use and is very close to the take aways

Lemon Juice 1/4 cup
Few cloves of garlic or a tps of powder/paste
1/4 tsp Cayenne
1tsp Paprika
1tsp Cumin
1/2 cup extra virgin olive oil
Pinch of salt/pepper and oregano.

That looks more like it! Will give it a go, thanks! :) How much chicken is that recipe for?
 
One that I use quite often is as follows:

2 tbsp flavourless oil. Groundnut, or rapeseed work well
1 tbsp lemon juice
1 crushed garlic clove
1/2 tsp each of cumin, cinnamon and salt

If you like it hot then add some chilli powder to the marinade as well.
 
Haha. They must be. Low in fat, low in carbs. I could live off them to be honest. :D

I have just noted that the guy with those recipes above has a book and you can get it delivered, shipped from the USA for £15.

Going on my Christmas list.

I am going to try the following:

1kg diced chicken
1 cup plain yogurt
1 tablespoon paprika
1 tablespoon ground cumin
1/4 teaspoon cayenne pepper (to taste)
4 garlic cloves, minced
1 lemon, juice of
6 tablespoons olive oil
1/2 teaspoon fresh ground black pepper
1/2 cup grated onion

I am trying this one because I can imagine the marinated product looks quite similar to how a kebab shop would have it.... Plus I have all the ingredients and won't have to leave the house to make it!

Next time I will try it with pomegranite paste - I seem to remember something about my favourite kebab shop saying they used it now you mention it.

I plan on serving it with :

Plain basmati rice with a few pine nuts mixed in, a good garlic/cucumber raita and a nice hot home made chilli pouring sauce.

For bread, I have some deli style flatbreads which I will spread with a thin layer of paprika and olive oil before grilling for 20 seconds either side...

Salad wise, a mix of finely chopped green pepper, onion, cucumber and tomato with a light dressing of oil, pepper, salt and mushroom ketchup.
 
OK, so here is the status of the task so far...
It looks the right colour, and smells right too so here's hoping... :)

Added all the powders - cumin, cayenne, pepper and paprika and topped off with the olive oil. Next to the yoghurt mix is a plate of diced and crushed garlic and onion with a whole lemon squeezed onto it - about to go in and be mixed to make....

This! Horrible looking isn't it? You really need to see it for real, looks much nicer! :)

And then finally - chicken mixed in the marinade, and going into the fridge for a few hours. Just the right colour I think.

Salad is complete, mixed cayenne, cumin and hot chilli powder to rub onto the flatbreads with a little oil before they go in the oven.

This is about 3/4 of the chicken I marinated... LOTS left over for tomorrow! :D

And here it is - up close and personal... It tasted a LOT like the kebab shops, but next time I will be using only 150-180ml of natural yoghurt and a little more oil to make the chicken blacken better.
