So i've just made some fantastic smelling Stock from the carcass, and Jonesing for some nice recipes. Thinking Chicken Noodle Soup and Paella, any better ideas?
 
Jonesing. Where has this word come from all of a sudden?

If you have a decent chicken stock, I can honestly not think of anything better to cook than a risotto.

Risotto cooked over an hour with homemade stock is utterly incredible.
 
Jonesing is a phrase from the 60's, from Jones Alley in NYC. I first heard it about 20 years ago in Neuromancer.

Risotto sounds like a good deal too.
 
I don't see why stock isn't made all the time. I now have a freezer packed with different sorts. It's great for anything you like. Soup, pies, casseroles, curries etc etc

People simply don't have the time and with cheap convenient alternatives available can't be bothered. I will occasionally make my own stock and yes your right it does taste nicer but it's too much effort for every meal and you can add plenty of flavour on the fly to most dishes to make up for a shop bought stock.

Not sure about an hour but I've never ever managed to get it too cook in the 16-18 minutes that all the books say, if I don't cook it for at least 30 minutes I get nasty crunchy rice that gets stuck in your teeth.

oh and Jonesing .... yuck.

It freezes pretty well.

I just bought a nice chicken, butchered it myself so we have a couple of breast fillets, couple of legs and wings and a bit of spare meat. The carcass (didn't pick it clean) went into a big pan with plenty of water, onion, carrot, celery, salt, pepper and wine and simmered away for a few hours.

The prep time was 20 minutes including hacking up the chicken.
 
It takes no time what so ever to make stock. Onion in half, carrot in 2, celery in, couple of bay leaves, peppercorns, salt, water and your leftover chicken.
If you can't do that in 5minutes you're doing something wrong. The point is, all of this is going to waste vs. spending on buying shop bought stock for 5mins outlay of labour for better stock.

Yes, but you can do that over the evening. It's not exactly a hard task

It's not hard but time consuming in a world where time is short and washing up sucks, also loving the fact people took the time to tell me how to make stock despite the fact it's so simple and I said in my post I do it occasionally when I have time!
