chicken thighs/drumsticks

Hi.

possiblly the dumbest question of 2013 but before cooking can I deskin and chop up off the bone and just pan fry the meat the same as breast ?
 
Debone but don't deskin, cook with it on for the flavour and if you don't want the extra fat then remove it. Trust me it gives so much moisture and flavour it would be a travesty to remove it before cooking.
 
If you like crispy skin, fine. Also keeps flesh moist.
Bone on gives it a better flavour.

De-skin if you don't like it. Season well and don't overcook...

You can also purchase chicken thigh fillets from most supermarkets. I tend to do this as it's less hassle (and as stated, thigh meat is superior to breast meat).
 
Do this all the time makes for much tastier stir fry's etc and the difference in calories beetween breast and thigh is pretty small for the massive taste increase.

cheaper if you buy it with the bone. I just buy whole chickens these days and hack them up takes 5-10 minutes to do one. cheaper still and you get a variety of meats + a carcass to make stock with. all the pieces freeze well.

Whole chickens and then ballontine works well enough yeah. Laziness often demands that I buy chicken thigh fillets though :p
 
Have to say though we've been eating through the special offer chickens we bought from Waitrose that we roasted, froze and then added to various dishes. Really can't beat whole chickens for value for money and overall taste.

We do buy the chicken legs from M&S and that is excellent value for money, 12 portions of meat for a meal servings cost of £10. :)

Yeah. I had a rare non-lazy night on Monday and gallantined a whole chicken with soy, brown sugar and garlic. Has been great for my work lunches throughout the week :)
