Hnmmm Ive roasted a chicken shredded it (long story we have 4 chickens in the fridge and no space in freezer!) was gonna make chicken fried rice or soup. BUT! I want to do something a bit different any ideas/suggestions, I was thinking something more mouse like or molecular gastronomy. randomshenans and glaucus! where are you??

I would do a terrine and enjoy it over the next few days. With a poached egg for breakfast, with crunchy bread for lunch, with French toast as a snack.

Asparagus or leek would go well amongst others. Does require gelatine though.
First recipe that looked right. Obviusley something you can go wild on and try different flavours/veg etc

We often have shredded roast chicken in the freezer. A few things we do:

Thai green/red curry
Pad Thai
Risotto
Chicken creamy pesto pasta (just mix crème fraiche with some pesto and heat through)
Paella with chorizo
Enchiladas
Chicken and bulgar wheat salad

I'm sure you could create a decent chicken and mushroom pie too?
 
make a stock from the bones for a ****-a-leekie soup?

a terrine would be nice like Glaucus said, try with toasted brioche and apple and fig chutney.
 
I make a chicken, bacon and mushroom pie if I have left over chicken - select a pie tin - fry off some bacon and mushrooms - mix with the chicken and a can of mushroom soup and maybe some black pepper and mixed herbs - add a ready made puff pastry lid and bake until the pastry has risen and is golden.
 
On the other three remove the breasts, legs, thighs and wings and freeze those. They take up much less room. Then boil the carcasses for stock.
