This rings a vague bell for some recipe I must have looked at at some point.

Has anyone done anything similar?

Yup, I'm aware of it being used for breads and pastries but I hadn't really seen chips (or faux-chips at least) made this way before. I'll have to try out this and the other alternatives mentioned.

BennyC, those look amazing. What're the macros like? And more importantly, the taste
