We all know how to make chili, a monkey can do it blindfolded.

However, a good chili? That does take skill if you ask me. I'm cooking chili at my friends this weekend and I'm looking for a chili recipe that will fare up to being slow cooked for several hours as we get stuck in with chores laid down by his better half.

I'm looking for something thick, spicy, plentiful as well and bursting with flavor.

If you suggest a already mixed chili sauce in a jar, you are not a man.
 
This is my recipe arrived at after many experiments with various recipes.

500g mince
500g steak strips
1 onion (chopped)
3 cloves garlic (chopped)
2 tins tomato
400m beef stock
1/2 tube tomato puree
1 tin kidney beans (rinsed)
1 Tbsp brown sugar
50g Dark chocolate (70%+ cocoa)
3 red chillies (chopped) (seeds left in if you want it hotter)
2 tsp paprika
2 tsp oregano
2 tsp ground cumin
1 tsp cinnamon
salt and ground black pepper

Use large casserole dish with lid, preferably heavy bottomed or cast iron.

Brown steak strips then remove
Soften onion, garlic and chilli (5-10 mins)
Add mince, cook til brown.
Re add steak strips
Add everything else and stir
Salt and pepper to taste
Top up with a little water if needed
Put lid on and put in 140c oven for as long as you like but at least 3 hours. Keep checking every hour or so to stir and to make sure it is not getting too dry and add a bit of water/stock if it is.

Serve with grated strong cheese on top with a dollop of sour cream and nachos.

Tastes even better the next day!
