Chinese style marinade

Hi all,

In the summer I buy tonnes of Chinese style chicken thighs, the kind that are in that deep red/purplish sauce.

What I want to do is re create that with my chicken breasts from Westin gourmet - can anyone recommend a recipe to get similar flavour as this?
 
Purplish would be hoysin sauce, the red sounds like a char siu sauce, though char siu is actually pork, you can get sauces/marinades that will be a deep red in colour and be called "char siu sauce". They're both a bit like a Chinese barbeque sauce.

For a hoy sin marinade, I will mix some hoysin sauce, soy sauce, honey, crushed garlic, five spice, a bit of pepper and a little bit of water to thin it out as it can be really thick, then add however much chicken you want and refrigerate overnight.

It was really good! It's the nicest chicken I've made. It was really versatile too, really good on a sandwich or on a bed of egg fried rice with finely chopped spring onions.

I cooked it in the oven too, it's best cooked on a griddle pan or something that can raise it up a bit to give it a slightly crispy outer edge.

Had a stab at it today, bit like your good self :D Amazing! Just as you said, it stays thick (minus the water) but for a BBQ that was perfect! :)

Ooh cool! Got any pictures? How long did you marinade it for?

I'm not quite there on the time it takes to marinade yet because I usually mix it up before I go to bed and leave it over night.

Sadly only one, that doesn't really do it justice... but it was good :)

EDIT: Marinade time wasn't that long, maybe a couple of hours tops.
 
That looks good! I forgot to mention that I score my meat and ***** with a fork before marinading too.

Doesn't look like you needed to do that though!
 
Oh yeah, cooking it on a barbeque would make a difference, I usually do mine in the oven.

When I cook on my friend's barbeque it's a completely different recipe. :D

Well the other recipe isn't really a barbeque sauce type of one.

I'll make a marinade up using a liberal amount of peanut oil, salt, pepper, sometimes MSG for EXTRA ENHANCEMENT, Raja Caribbean Seasoning and Raja Hot and Spicy seasoning.

I then cut chicken breast up in to mini-fillets, score them in a hatch pattern roughly half way deep, and then soak them in the oil and spices marinade for about 10 minutes, then straight on to the barbeque.

The oil running off the meat makes the flames kick up and lick the chicken. This makes some of the most tender and juicy fast cooked chicken I've managed to cook.

This makes for some really nice chicken that you can then stuff in a pita bread with salad and mayo.

Well the other worked just fine :)

I sliced it and had it along with salad in a soft wrap.... could go another now!

they sell the chinese marinade in tesco for ~£1 for a small pouch, alternatively pop into a butchers and he will sell you a bag of it (i used to be a butcher and were happy to sell it, it'l be better than the Tesco one as well ;))
