There are 2 types that i know of that are used in chippys... Maggi do a fantastic Gravy but most of them use golden fry...

My Mrs must have curry sauce over her chips. Being an Essex girl, she normally drops them at the sight of me wearing my see through spandex

Chip shop gravy is made with chip shop gravy powder.

Sounds simple but it's bought in bulk and not available from a supermarket

Have to say chip shop gravy is immense, though I'm a fan of all lovely gravy things. When Homer Simpson was lying in a hammock, reading "Gravy Afficianado" I cried when I realised such a magazine didn't exist.

I was a fish fryer for a few years and have to say, it's the same principal again.
