Do you prefer milk, dark or white ?

I used to prefer milk but I'm getting a taste for dark. Although 90% is bitter as hell.

Just made 4000 kilos of 90% cacao tonight before we had problems with a conch. That stuff is sticky as hell I really hate it when its on the schedule.

Got over 30 kilos of freebies 2 weeks ago, sadly 17 kilos of that was white truffles. All my mates were well pleased though

Who do you work for? Craft?

I work for lindt usa, making the chocolate before the rest of the factory uses it.

Dark chocolate, the rest isn't really chocolate.

Not true, there is Cocoa Liquor in Milk chocolate too. well in our stuff anyways.

Also if its out in europe, as its quite new and you like white chocolate, you must try the Lindt White strawberry bars, they are divine and it smells fantastic when they are making them.

Sea salt truffles are awesome too

Oh do you work in the Stratham factory? (I had a quick Google). Does Lindt chocolate made in the US taste the same as the stuff they make in Switzerland?

yes and its as close as possible to the taste, the milk powder is from the US so it has a slight taste difference to the swiss one, due to the difference in grass that the cows eat.

I think it's got to be either Lindt Lindor (any type!) or Lindt Excellence: A Touch of Sea Salt. Both are spot on. In fact, pair that with a glass of red wine and you're onto a winner. Having said that, it's surprising how good the Lidl stuff is.

It's odd that I find the more expensive brands are much better for dark chocolate, while the normal brands (Cadbury for example) are better for milk and finally the cheaper brands (think pick 'n' mix chocolate mice) are best for white!

Sea Salt truffles are quite nice. Everyone loves the peanut butter truffles over here don't know what it is with yanks and peanut butter..
