Chorizo Recipes.

i sometimes make a casserole with chorizo, chicken, red pepper, onion, chopped tomatoes etc - it is nice served with mashed potato or rice

I made this once as well. Couldn't find a full chorizo sausage in my local tesco express though so grabbed some chorizo sandwich slices and a pack of diced chorizo and used them as a combo. Was nice and easy to make as the prep is a piece of ****.

Butternut Squash and Chorizo Soup

1 Whole Chorizo
1 Butternut Squash
1 Leek
4 Stalks of Celery
1 Tin of Chopped Tomatoes
2 Cloves of Garlic
1 Large Onion
1 Chilli
Chicken Stock
Butter and Olive Oil

Get a good knob of butter and add it to a large pot with some olive oil. Heat it up and add the fresh vegetables, garlic and chilli. Leave them in the pot with the lid on for a couple of minutes so they sweat. Add the chorizo chopped into slices and stir in. Sweat for another couple of minutes.

Add the chicken stock (or veg stock if you want) and tin of chopped tomatoes and cook for about 30 minutes.

Blend in a blender or with a handheld blender.

This tastes amazing and great if you are on a low carb diet.
 
Spanish Style Chicken Casserole

1 Packet of Chicken Thighs
1 Whole Chorizo
2/3 Courgettes
1 Aubergine
2/3 Peppers
2 Tins of Tomatoes
3 Cloves of Garlic - chopped finely
Liberal splash of sherry vinegar (white wine if you don't have it)
Generous amount of paprika
One jar of good olives

Brown the meat and vegetables in a pan over a high heat. You only want to brown them at this stage. You can do this in stages if you want.

Transfer all to a large open casserole dish. Add the tomatoes, garlic, paprika and vinegar and stir in. Add the jar of olives and wash first if they are in brine.

Stick in the oven at about 180 for an hour and a half to two hours. You will need to take out and stir about 3/4 times. The top will brown quite a bit and give a lovely depth to the taste. Stir that all in.

Serve with crusty bread (or without if you are low carbing)

Serves about 6
 
You can do like a paella with it, with chicken thighs, peas, peppers, onions, rice, chorizo all cooked up in a pan/wok then add the rice and cover with chicken stock and turmeric, will all boil down to a fluffy rice/chicken dish. Easy and tasty.
 
I like to put chunks of chorizo under the skin when roasting a chicken stuffed with boiled lemons. Works great at keeping the meat lovely and moist whilst adding nice flavour to the chicken and the juices flavour the potatoes brilliantly.
 
When I'm in a rush, a good low carb snack meal is to chuck chicken and chorizo in a hot pan, add mushroom and green pepper, then pesto and a dollop of Philadelphia. Takes about ten minutes. If you wanted to make a proper meal and get the carbs you could add cooked pasta.
 
You should make Lentejas ... although I don't think you can buy proper lentils in the UK...

Lentejas are super healthly, cheap, easy to make although the looks are rather suspicious. They also taste better the second day!!! :)
 
Cook it in red wine, it's amazing.

I normally do this if I find chorizo on offer, cut it up in to chunks and chuck it in a pan with enough wine to mostly cover it for half an hour or so (test it). Let the wine reduce down and add to it if it gets too low.

If I can resist eating eat out the pan I might have it with rice/beans(cook a tin of cannelini beans with a big glug of olive oil, salt and pepper and mash to a paste)/pasta with a side salad etc.
 
I frequently make the lentil thing, it's really not necessary to fry everything up in advance though. You can cook the lentils and add the sausage and other vegetables about halfway through. (Dry lentils take ages to cook, so if you've added the vegetables from the start they could literally dissolve by the time the lentils are done! if you're in a hurry you can pre-boil the lentils, ie plunge them in boiling water, strain it out, then add fresh water and all the other ingredients and cook normally.)

I also use chorizo for a nice pasta sauce, with chopped leak, garlic and cream. Fry the leak and garlic, only add the chorizo at the end just before the cream, as I personally don't like it when the fats in the saucage start melting. You can add some chillies if your chorizo does not contain sufficient bite.:)
