I've only just learnt that you can mirror your Chrome browser (or ChromeOS) to your TV..? This makes it way better. I thought it was just for specific apps in Android.

Nope.

It's the Chromecast that connects to Wifi, not your TV!

USB is only used for power.

How robust is the streaming over wifi, with say a 720p mkv?

Streaming 1080p high profile MKV's just fine here.
