I make Cinnamon doughnuts muffins with an apple sauce filling. I love these, but I'm not allowed to make them that often, as I will eat all of them. Especially when warm.
I know I can't really call them Duffins as that's a Bea's of Bloomsbury thing... so Muffnuts? Perhaps not...
Makes 8-10
225g Plain flour
1.5 Teaspoons Baking powder
1/2 Teaspoon Table salt
1/4 Teaspoon Ground nutmeg
1 Teaspoon Ground cinnamon
150g Sugar
75g Vegetable oil
1 egg Lightly beaten
170g Milk
1 jar apple sauce
In a large bowl, sift flour, baking powder, salt, nutmeg and cinnamon; whisk to combine.
In another bowl, combine sugar, oil, egg, and milk.
Stir wet ingredients into dry ingredients. You can leave it a little lumpy or you can whisk the hell out of it.
Fill greased or paper-lined muffin cups half-full
Place one teaspoon of apple of sauce on top.
Cover with enough batter to fill muffin cups three quarters full.
Bake at 350°F or 180°C degrees for 20-25 minutes or until a skewer comes out clean.
Leave them to cool for a couple of minutes while you make the glaze for the top.
125g icing sugar
1 teaspoon cinnamon
1/2 teaspoon vanilla extract
1 to 2 tablespoons of milk
Mix all together in a bowl using the bare minimum of milk you can to get the glaze spreadable and apply while they are still warm. If it's too runny it won't set properly.
Next is the most important step.
