Cod Loins

I bought these cod loins from the chiller shelf at tesco on wednesday evening on their use by date, but had other food to finish so couldn't eat them that night. I got home and stuck the packet straight into the icebox. Took it out at 10am this morning and started defrosting it in the fridge to eat tonight.

It says on the back that it can be frozen on the use by date. It's vacuum packed. Some people I spoke to said it's a bit dodgy. What do you think? I mean the instructions say it's ok but I'm not sure now. When defrosted, if it doesn't smell funny is it ok?

A lot of the use by dates are shorter than it actually is so you will be fine. Good test is to see what it looks like and smell it and if it is fine and doesnt smell then cook it. Make sure to cook it properly (but no need to over cook it) and its all good.
 
Thanks all. Seems to be defrosted after 12 hours in the fridge. Smells ok to me, just a normal fishy smell. Seasoned with salt and black pepper, wrapped in foil and currently baking for 28 minutes at 160c fan assisted. Not sure what to add to it when cooked. Don't have any lemon. I guess melt some butter and drizzle it over.
 
Well, tasted great, along with a large baked potatoe and sweetcorn. Every bite of fish I took I was worried about, wondering if it something bad was going to happen to me :p
 
If OP isn't dead and gets them again, I like to do these fried on one side in a skillet just because it's so easy :p Oil in a pan, heat until lightly shimmering, place cod on one side and cook until it forms a firm crust, at which point it will have steamed through the rest of it. Carefully remove and serve crust-side up with squeeze of lemon. Tasty!

I cook cod loins regularly and they are excellent value when on offer. I wrap mine in prosciutto or parma ham after seasoning in salt and pepper then bake in the oven for about 20 mins at 160-180ish. Comes out lovely and flakey without being too dry, ham crisps up nicely to give it a contrasting texture, too.

Serve with something like garlic smashed potatoes and asparagus or tender stem broccoli.

Lovely job.
