Have been doing a bit of reading on here and the following options seem to be well recommended:

Canon S100/110 (£200-£250)
Sony RX100 (£400+)

Is there anything else in between, worth considering?

From what I've read so far, it seems advice is roughly S100/S110, unless you can stretch to the Sony.

Any others I should be considering?

Really looking for something that I can use in a variety of situations:

  • Family pics (mostly indoors)
  • Good for holidays (beaches and city breaks)
  • Hillwalking (landscapes, long views, bright sunshine, sunset)

At the moment I've got a Fuji F100fd and an Olympus 850SW, both about 5 years old. I do love the ruggedness of the Olympus and have used it underwater on a few occasions, in fact out of the two, it's pretty much my 'goto' camera.

I suspect that I'm best to replace the Fuji with something that offers the best image quality within my price range, and to relegate the Olympus to situations where it is really needed (snorkelling, rafting, etc). But if there is anything that would replace both and doesn't really sacrifice on the image quality, then I'm be open to recommendations on that front too.

Thanks.

Have you considered the NEX-3N? About £300-350 depending on where you get it from and its bang in the middle of the two you suggested above. And personally I'd take the 3N over the RX100 every day of the week.

If You can afford it and want excellent image quality then go for the RX100 , if you want good image quality v price then the s100 or 110

CSC style cameras are an option but they're not as travel friendly as a compact

The Small Nikon 1 and Panasonic/Olympus m43 cameras are not much bigger than a good compact like the RX100 but give much better quality (especially the m43 cameras)

I considered a Canon S110. It give a best feature to another camera and available in affordable price. It is fastly start up, give 12,800 ISO to 6,400 ISO light sensitivity, and 1.1 slightly thinner.

You've pretty much got the best two options in the genuinley compact market lined up, if you can afford the Sony get it if not the Canon will no disapoint we have an s100 and it is a great little camera

You say not much bigger but for me the key difference is pocketability the RX100 will fit happily in you jeans pocket and always be at hand which no CSC will manage even with a pancake prime let alone a decent walk about zoom.

Eventually went for the S110 - took a bit of a gamble and bought from DigitalRev, so imported from Hong Kong. Price was over £70 cheaper than anywhere else (outside of ebay).

Delivery seems to have gone smoothly enough, will need to get on and start playing around with it.

Thanks for the advice.

Panasonic LX-7 will give the X100 a run for its money, sensor is smaller but the lens is much faster so in the end you get better low light and DoF characteristics at the long end.
