Compressing movie collection?

Typically a high quality .h264 rip will be around 1Gb for DVD or 6-8Gb for a Bluray - so yes, a massive difference :).
 
You can't compress(zip,rar, etc) a video file as it's already a compressed file (technically you "can" compress them as in you will end up with a .zip file but it won't be noticeably smaller than the original)
The only way to save space is to reencode using a different codec.

Is there a particular type I can encoded all of the films in just for storage?

Do they convert back or would you just play them in the new encoding?

Video is already compressed to fit a DVD or Blu-ray. There isn't really anything you can do to make it take up less space and then be able to recover it back to the original quality.
