Confit

I need to buy lots of fat for confit, as I'm entertaining over the festive period and have decided to cook (attempt) amongst other things, confit duck legs and confit pork belly.

Couple of questions :

- Where can I buy loads of goose fat? Supermarkets only sell 200g tubs from what I can see, not enough for a confit and too expensive.

- What fats do people recommend for confit pork? Can I get away with vegetable oil, or is something else worth a try? I can't use ground nut oil as I'm allergic to nuts.

I'm not sure of where to get cheap goose/duck fat but I have used beef dripping before. Pretty cheap and very nice. Usually available from larger supermarkets or butchers.

I wouldn't necessarily worry about using goose fat for the duck - there's so much fat already in the legs you could get away with using a vegetable oil instead.

What fats do people recommend for confit pork? Can I get away with vegetable oil, or is something else worth a try?
I'd be going for lard, as it seems the obvious pairing.

It will stink your kitchen out though, so be prepared to keep the room extremely well-ventilated during the cooking process.
 
Oh yeah... lard..duh. That's actually what I used last time I made confit pork. Not sure why it didn't occur to me to suggest that :p
 
Cheers guys. Went to Waitrose and they had 500g blocks of beef dripping for 72p, possibly the first ever keenly priced thing I've ever bought there :p. So I bought 4 blocks and will give it a try out with some lard or vegetable oil tomorrow.
