Confused on monitors for work and play

I'm setting up a home office and giving my current PC to the kids den. Am confused on monitors so appreciate some advice.

Currently have a 24" AOC G2590fx for light gaming with a Rx580. It's OK, bit washed out but does a job. That and the PC are moving out of the office to the kids den. For work I've ordered a Dell P2421dc, which is 24" 1440p IPS and has Usb-c for my laptop. Was planning to get a P2421d as a 2nd screen. However, will also want to do some light gaming on a new build once GPU prices get sensible and conscious that the Dell's may not be ideal. I've never seen a 60Hz next to a 144Hz for comparison though, or seen 1440p next to 1080p.
I would like adjustable height stands and budget is around £550 (of which 230 spent on P2421DC) . Ideally IPS.

Options:
- cancel the Dell and go for dual 24" 1080p.
- get a larger single monitor
- get a different 2nd monitor for gaming.
- something else??

Any thoughts or recommendations on the above? Also would a Rx580 be able to run games on 1 or 2 1440p monitors?

The only thing is I would question whether 1440p is wise for a 24" monitor. Personally I find that pixel density too high. A 27" 1440p is better in my opinion.
Gaming certainly is a lot nicer at even 90Hz.

The Dell I've ordered is 60Hz. Suppose I could have a 1440p alongside a 1080p with a higher refresh for gaming, then scale the 1440p as needed for work. God knows!
