I'm thinking of getting an xbox, mainly because I like the occasional fighting game and the PC game market is hugely lacking in such titles.

So, how would I connect it to my monitor (dont have a telly in the PC room)

Would I go VGA, or would I benefit from going HDMI to DVI converter, and also how much roughly is each option?

What inputs do your speakers have?

You'll be able to use R/W phono out the box, and there's a toslink connector on them as well.

You'll be able to get an adapter if neither of them are suitable.

VGA route is likely more flexible as far as monitor/tv support, so I'd recommend that. To echo what orderoftheflame said, make sure you stick to the official one. I appreciate many people will have flawless experiences with third party cables, but I've tried 2 that were unable to handle a 1080p signal. The picture was either fuzzy, or clean but jittery, whereas the official cable has no issues.

As already mentioned, the official cable comes with 2 RCA phono cables for left and right audio, as well as a 2xRCA female to 1x 3.5mm male adapter. Depending on your speaker setup, this should be all you need to get up and running, but have a thorough check of your audio input first.

I had to make use of a 2xRCA female to 1x 3.5mm female adapter that was bundled with some logitech speakers I had. Couldn't find these sold online for love nor money at the last time of checking.

I got a VGA cable of that well known auction site for £3-4 and it works fine, you just need to get a RCA female to 3.5mm headphone female, or if you can only get RCA female to male 3.5mm, you can get a 3.5mm female to female adapter and it works fine
