Apart from the higher clock speed is there any other difference between the X6800 and the E6700, E6600 chips?

Unlocked multiplier.

On phase change you're more likely to get well over 4Ghz with an EE chip not because they are inherently better but simply because of the unlocked multiplier. Seems to be that current boards top out on FSB before you reach the chip limit.

I have an X6800. If you havent got Phase (which i havent) dont get one as they wont go over 4Ghz, you can clock as well with an E6600 tbh.

Mine bottles it at 3.8, need a new mobo though as this badaxe is horrible.

But mine was free (dont ask) so im not bothered really.

E6600 is the best bet out of the lot.

They're probably the most cost effective for air cooling certainly, and possibly water - but you'd struggle with them on phase. E6700 minimum for phase imo.

definately water... I can get mine to 3.8 under water... but I know that the e6600 can get to 3.8 on water
