You could also replace every part of a car, or a computer, yet it still functions properly?
Shall we take apart your brain and reassemble it and find out? At some point along the way you will lose conciousness and there is no way to turn that back on.
If someone went about and gathered all those cells that you lost over seven years and reassembled them into another you, who is also conscious and has all of your memories would you still be "you"?
I wouldn't worry about it, though. Philosophers have been wondering about this since John Locke and that's without taking into consideration those in science who consider it too.
