Considering a new build.

I don't really need to upgrade but I've had some money come through and my current pc has been on pretty much 24/7 for 10 years. It's no longer capable of holding a stable overclock. It's showing its age in gaming (but so am I). It's not compatible with windows 11.

What are the trends nowadays? AMD or Intel? I'm happy to move the graphics card over from my current build as I don't game above 1080p and the 1060 is quite heavilly bottlenecked by the 3770k and I like that the 1060 doesn't turn on the fans until it's under load. My biggest needs for the machine are silence so I can use condenser microphones in the same room as it, and long term stability as the most important use is for making music - my current build doesn't come close to its limits for that and from what I can tell even a modern i3 would significantly outperform the 3770k I have atm. If I can avoid replacing my PSU I'd like to - are we still on 24+4 pin power and 8 pin CPU power?

I need lots of SATA ports.

Lots of things to consider. What wattage is your PSU and how old? If you are mostly interested in production of say Intel or high end AMD but be aware AM5 will need a few BIOS updates.
I'd probably say a 13700K with a Z690 or Z790 motherboard, the Gigabyte Aorus Elite Z790 looks good, and some DDR5. Very much depends on budget.

The Ryzen 7900 is very efficient for a 12C 24T CPU and should be easy to cool.

My PSU is an 850w Seasonic that was massively overkill so has had pretty light use compared to what it was designed for. Doesn't show any signs of giving up the ghost any time soon. I'd be willing to stretch my budget for DDR5. Looking at around £600-£700 for the CPU/Mobo/RAM.

In terms of production, I feel like a modern i7 might be slight overkill in this day and age. I use a lot of real time processor heavy plug-ins in my stuff and my current computer doesn't really struggle at all with my projects. I don't do any work with video at all, apart from the occasional blu ray or dvd transcode.
