Considering Major Upgrade

I'm considering a major upgrade, this is my current system:

Asus Maximus formula
Q6600 CPU
4GB DDR2 (used to be 6GB but a couple of sticks went bad)
2 x Radeon 4870 in Xfire
1 x 60GB SSD
2 x 750GB in RAID0
1 x 1.5GB HDD
1x DVD-RW
Cooler Master HAF case

I think I'm just about at the limit at what I can do with this now and think It's time to upgrade the mobo.

I mainly only use it for gaming now as I have a media server for downloading and streaming and an iPad and smart phone for webbrowsing. I would like it to be futureproofed as I can't afford to do this all the time these days so I'd like to make sure I can add a second GFX card down the line and have the option to upgrade the CPU in a couple of years if needed and would like to get the biggest size memory DIMMS possible to leave space for the max the board can take.
I was thinking of going for an i7 but I've noticed people saying i5's are fine for gaming, also thinking 16GB ram hopefully on 2 8GB DIMM's I would like to stick with AMD for GFX just simply because I've never had issues with ATI cards and nvidea's always seem to give me problems. So basically what I'm after is a new mobo, Memory, CPU and GFX card.
Would it be worth it and what should I go for?

Go the i5 route, an for what you do 8gig of ram will be more than enough for gaming.
If it was me id sell all the old hardware an go i5/ddr3/ change the graphics for a single card, most of the games i used to play didn't support cross fire or had bad results.

Also whats your budget and what Psu do you have?
 
Sorry forgot to say, about £700 but can go a bit higher if it's worth it. I play all sorts of games, COD, BF3, Starcraft, Minecraft, Need for Speed, FIFA, Street Fighter. Next games I'm going for will be Black Ops 2, Borderlands 2 and Assassins Creed 3. Was thinking 16GB mainly because I would get two 8GB DIMM's and then I can hit 32GB (which seems to be the most the current mobo's can take) if needed down the line without having to replace the existing sticks.
 
8gb of ram should be plenty for any game,no need to spend unnecessarily imo

a decent graphic card/psu is the most important and id choose a z77,you can also use lucid virtu mvp which would help in gaming
 
As already mentioned 8gb ram is sufficient, unless you are using any applications than require 16gb+. Can you post what Psu you have. Also what cooler do you have?

Sorry, not sure what the PSU is but its fine for the job, I got a decent one last year. I'm using a stock cooler at the moment so I would need a new one.
