I have a 27" 144hz 2560x1440hz monitor Samsung hdr

If I bought PS4 or Xbox one (or the more expensive versions) would any of these consoles allow you to set native resolution of this display and or run at higher than 60hz ideally 144hz and ideally freesync?

No console game runs over 60fps so it would be overkill. You should put that screen on a PC. The 4k consoles support 4k and below so 1440 is no issue at least on the xbox.

I have my Xbox One X hooked up to my 2560x1440 165Hz monitor. You won't see any games go above 60FPS but the X outputs at 2560x1440 which boosts nicely. The PS4 Pro does not support 2560x1440 resolution.
