Is it possible to create ISO files with this software rather than burning them?

you can choose not to burn

you could use imgburn to create the iso file, in build mode, choose destination as an iso instead of a dvdrw

If you choose not to burn, what does it do?

it'll just leave the files in the output folders,
bledd^:
it'll make VIDEO_TS and AUDIO_TS folders
bledd^:
drag them into imgburn, and it'll know what to do
bledd^:
audio-ts will be empty, videots will have a load of vobs in it (which contain video and sound)
