Converting Hi8 Video to DVD/MPEG/AVI etc?

I've got some old movies on Hi8 that I'd like to make digital copies of. The camcorder I have only has an S Video out and a component/SCART out. I've got a Mac with a thunderbolt port, plus an HDMI to Thunderbolt adapter if this helps? Any ideas welcome
