My wife has tried a few recipes for this country and so far nothing really works, so a few good recipes for chocolate chip cookies would be nice to have. We're from Sweden (20+ years ago) and this is the first time we have tried to make these, so I am looking for soft cookies please, if at all possible.

These are currently on my, oneNote, to do, biscuit list,
unfortunately not chocolate (get some calebaut chips from Amazon though),

Classic Anzac Biscuits Recipe

Prep Time 10 minutes
Cook Time 20 minutes
Total Time 30 minutes

Ingredients
  • 50 g flour
  • 75 g sugar
  • 2/3 cup coconut
  • 2/3 cup rolled oats
  • 50 g butter
  • 1 tablespoon golden syrup
  • ½ teaspoon bicarbonate of soda
  • 2 tablespoons boiling water
Instructions
  1. Preheat oven to 180c.

  2. Mix all of your dry ingredients together.
  3. Melt the butter and golden syrup together.
  4. Dissolve the bicarbonate of soda in boiling water, and mix into the butter and golden syrup.

  5. Make a well in the centre of your dry ingredients, and mix in the wet mixture.
  6. Place spoonfuls onto a greased tray and flatten with a fork.
  7. Bake for 15 – 20 minutes. The biscuits will appear soft on cooking, but will harden up as they cool.

Abbey Crunch Biscuits
  1. Abbey Crunch Biscuits recipe as given to me by my big sister Helen.
    Makes 36 low-guilt biscuits or 24 cookie sized greedy biscuits



    5oz Butter or Marg (I use ALDI cheap-seats butter - only 10p more than Stork marg and makes baking taste loads better)
    5oz Sugar (I use whatever's to hand - normally granulated)
    1 tablespoon Milk
    1 teaspoon Bicarb of Soda
    1 teaspoon Golden Syrup
    5oz SR Flour
    4oz Rolled Oats (I use jumbo organic rolled oats from Holland and Barrett - I think that they are Mornflakes)
    1. Cream butter and sugar
    2. Mix in milk, soda and syrup
    3. Stir in flour and oats and mix well
    4. Roll into small balls and put on greased baking tray
    5. Cook for 25 mins on gas 2 till golden

Perfect, made these today.. unfortunately i had to use dark choc chips but turned out really well!

Do what you want with the chocolate, I like to get a block or two of decent dark/milk and smash it up instead.

Key is not to overbake, they should be goey when you take out of oven .. after cooling they'll firm up but be super chewy.
