I decided to bake some muffins the other day, and they turned out pretty well.
I filled each muffin case to just over half way, and they rose nicely. But as you can see from the picture, they turned out a bit flat.
I really wanted to get a big ol' muffin top, so I baked some more a few days later, and I filled each case up to just under the brim, and this happened:
So, does anyone know how to get a decent muffin top when baking muffins without it turning into a load of retarded muffins?
I used baking poweder as a rising agent. Would something else be better? I think it might also be because the muffin cases were quite thing and maybe went a bit floppy from all the mixture I put in them the second time around.
They taste bloody nice, despite the look of them.
