Sharwoods Chinese Curry, Sweet and Sour, Jalfrezi etc etc all say 'after open keep in refrigerator and use within 3 days', why?

2+ year shelf life but goes bad within 3 days after opening?
 
Because they tend to have either been pasteurised or irradiated to kill bacteria in them. When you open them up again you’re letting the bugs back in.
 
If it's been refrigerated and not left out for a long time sauces are generally good for 7-10 days (we work on a 5-day limit but it's a bit different for restaurants).

It depends on the sauce as well. For example, one that's vinegar-based or has a lot of sugar will have a much longer shelf life, even when not refrigerated. Ketchup is a great example.
