Yup.
1) In a frying pan fry some pancetta first, releasing it's fat. Remove to big saucepan. Fry a big onion which has been roughly chopped. Remove to pan. Dip beef into flour, shake off excess, fry to give colour (I mean proper caramelised here, not just so it turns grey). Add to pan.
2) De-glaze frying pan with a little Guinness. Add to pan. Add the remainder of the bottle of Guinness to pan. Pepper. Bay leaf. Bring to simmer. Cover with lid slightly ajar, cook for 1.5 hours. Add handful of chopped mushrooms. Simmer for a further hour.
3) Serve with mash / dumplings.
