Cooking what sauce to do with tuna.

Im really getting in to the cooking lark and enjoying it, im going to branch out to fish, and I know theres a few other cooks on here.
Just wondering what kind of marinade/sauce would go with tuna and salad/ new potatoes.

I think i want to do something like the butter stuff you get at the fish counter in asda. the stuff that you put in the tinfoil with the fish in the oven.

Im tempted to try to make some kind of sweet chilly thing but dunno how to.

Tuna can be marinaded with a dark soy sauce, brown sugar and fresh lime mix. Serve with fresh red Thai chillies and lashings of coriander :)

Alsdo works well with salmon.
 
i like a nice chunk of salmon lightly fried in oil and pepper so its soft in the middle but slightly crispy on the out side :)

A lemon caper sauce: a little lemon juice, a little Dijon mustard and olive oil, stirred with capers and some fresh parsley.

Thanks, how would you go about making this. Is it as simple as throwing it all in the tinfoil and cooking for 15 mins ? What gas mark?
 
Mix it all up, rub all over the fish, pour any excess over the top, leave it overnight, covered, on a plate in the fridge.

Cook it the next day, fried, grilled, ovened, whatever.
 
This Jamie Oliver one is for salmon but would work well for tuna. I play around with it but it's very easy and very quick.

2 sticks of lemon grass
1/2 small bottle dark soy sauce
bunch of coriander stalks finely slice (keep the leaves for later)
Big bit of ginger but grated well
Garlic cloves to taste (4 - 8)
4 tbps runny honey
2 red chillies, deseeded unless you like it hot
4 spring onions
2 limes


(1) Bash the lemon grass and mix with the soy sauce, stalks, ginger and garlic then rub over the tuna.

(2) Leave to marinade for an hour or HOWEVER LONG TUNA NEEDS. I'm not so sure about this part as salmon can be very fussy and musn't be over-marinaded and I don't really know how best to cook tuna.

(3) Preheat the grill. When you're ready to do the tuna, remove it from the marinade, brush it with the runny honey and grill for X minutes (check this, don't know).

(4) Serve with the chillies, spring onions, coriander leaves and sprinkle the lime on the whole lot.

I tried the above with Light Soy sauce once as I'd run out of Dark Soy and it wasn't so good. Stick to the dark stuff as it's one of the few recipes where it works.

On the subject of Salmon, I must be weird as I can't stand the thinly sliced stuff, makes me heave. Has to be from a tin :confused:

Tuna is fine either way though.
