So it getting close to valentines day and I thought, what better to cook for your loved one than <B Lambs hearts <B

Ingredients

You'll need some lambs hearts
Sage and onion stuffing (enough to fill them)
Half a finely chopped small onion.

Set your oven for 180c

Method

Remove the hearts from any packaging.

Cut away the arteries to help open up the tops of the ventricles. Then wash. Get your fingers down into the ventricles to remove any congealed blood.

Mix the chopped onion into the stuffing and stuff the hearts

Roast in the oven for 1 1/2 hours turning over after the first 45 minutes.

I've just had mine with mash and a red wine sauce but I'd suggest sharing meat and two veg with your loved one ;)

Looks nice, and very different :). Can you wrap the hearts in anything... say, bacon?

The flavour is not a offal as you would think ;) It would probably go with bacon but I would go with a low salt variety so you don't mess up your heart too much.

How much do the hearts cost? Might nip into my butchers later in the week and order some/see if they have any kicking about.
At all similar to liver/kidney?

I have similar knives to you!

I think they were £1.60 for the three at Tesco. I would liken them more to liver but the texture is tender in comparison.

Have you just put the stuffing through the arteries into the ventricles or have you hacked into the heart with the knife to stuff it?

Just take a 1/4 inch or so off the top to remove the arteries and the venrtricles should all be open. Bear in mind they will shrink a little so some of the stuffing will ooze out.

Is it just me or is it a bit creepy to be serving hearts for dinner on valentines day.

No more creepy than serving chicken breasts or cows rump really :)

Cheers for the comments guys :)
