Cooking with Ingouk: Beef Stew

What you need:
2 big potatoes ( i use baking ones)
2 big carrots
1/2 onion
beef (i used cubed one from tesco)
1 bottle red wine
1 can lentils
1 can chopped tomatoes
1l beef stock
oil/butter

i usually marinade the beef the evening before in redwine, salt, pepper and a bit of garlic.

chop the 1/2 onion into small bits.

heat some oil and a know of butter in a pot and fry the onion for a few minutes (dont let the onion get brown). the throw the beef in (if you marinaded it, take the beef out and let it dry a bit).

Stir and let cook for a few minutes, while you peel the carrots and potatoes.
and cut them into chunks.

throw the cut carrots and potatoes into the pot and fill up with beef stock and red wine (or use half the redwine marinade and half redwine). it should all be covered now. put one can of chopped tomatoes in ther too. Bring to the boil and let it boil for 10 minutes then turn the heat down and let simmer for a few hours. i let it usually simmer for 5 hours. after 4 hours drain the can of lentils and put the lentils into the pot.
as for seasoning i usually taste after a few hours and then adjust salt and pepper to taste. at the end the potatoes and carrots should be nice and soft and the beef should fall apart when pressed with a fork against the pot.

i like to use swede instead of potatoes.

though i do like to serve my stew with mashed potatoes and fresh greens.

having some tonight which i batch cooked and froze

also.... dumplings go really well with stew and are easy to make.
 
you could leave out the redwine and use more beefstock.
i cooked it without redwine before, just added more beefstock to cover it all.
i usually cook this at the weekend and freeze it in portion for during the week, when i dont have enough time to cook, or want a quick meal at 10 at night.
will try with swede instead of patatoes next time. i think most root vegetable will work well in the stew.
