I wanted in on the cookery fun, so here's something I whipped up this evening with some Mahi-mahi fillets I have.

First the fillet itself:

Next I make a marinade from olive oil, chilli and lemon juice

Pour this marinade into the packet and let the fish sit for 30 mins, turning every so often

Now I was originally going to serve it with roasted courgette and tomatoes, but I couldn't get ahold of any courgettes, so I opted for a mushroom, tomato and coarsely chopped garlic combo

Chuck them in a bowl, and add a generous amount of oil and basil

Stick the fillet on a tray, and grill for roughly 5 minutes per side

I roasted the other bits as well, and served with oven chips, NOM! :D

Shame I couldn't get any courgettes, the green would have added to the presentation big time, hehe.
 
That looks awesome, might have to get some Mahi-mahi. Have been on the look out for different fish of late with the advent of pollock and all the cod-alternatives, good one for the list.

Agree with the above though, I'd probably have opted for garlic mash and long stem brocolli. What what /monocle. :D
 
Love the fish and veg, not sure about having it with chips though, serve it on a bed of tagliatelle would be my choice. :)
 
Hehe, thanks guys, I know the chips are controversial n whatnot, but they were a means to an end with me running late and only getting home at 8pm :(

Plus, I save my really fancy cooking for when I am entertaining a lady ;)

Some guy on masterchef the other week cooked steak and chips and won, so it's not the end of the world :p

Looks damn good though, good effort. :)
 
what's mahi-mahi and do you have detailed method for making that marinade of chilli and olive oil?

Lidl were doing a deal on them at a bloody good price, £3.49 for 550g :)

As for the method, well, it wasn't detailed, haha.

Glugged some oil into a measuring jug, added some chillie flakes, and the juice of half a lemon.
