Proscuttio wrapped chicken breast with blue cheese and rice

Preparation time
~15 minutes

Cooking time
~30 minutes

This is for two people. Apologies for the camera "work", taken on a poor phone camera.

Ingredients
  • Two Chicken Breasts (I used 3 because I'm a greedy bugger)
  • 6 slices of proscuttio
  • Blue cheese (I used St Agur)
  • Rice (I used wholegrain)
  • 2 Carrots
  • Peas

Method
Firstly, soften the rice by placing the desired amount in water in the pan, and finely chop the carrots.

Set aside.

Pre-heat your oven to 180°C.


Taking a sharp knife, cut the chicken breast in two, being careful not to cut all the way through, so you can fold out the breast. Place the cheese inside:

Next, wrap the breasts in the proscuttio:

Bring the rice to the boil and then simmer for 20-25 minutes. At the same time, place the chicken breasts into the pre-heated oven.

Bring the carrots to the boil five minutes later and simmer for 15-20 minutes, adding the peas with ~3 minutes to go.

Serve with a light red wine, or in my case, water ;).

Looks goooood :cool:, my mouth isn't watering at all.

Pre-heat the oven to what temperature?

Edit: Oh 180c, just spotted it :D
 
Looks well nice!...making me pretty hungry in fact.:p

Not too keen on blue cheese but don't mind it so much when its an ingredient.

Not sure to be honest. The blue cheese compliments the chicken so well. You could try a milder cheese, dolce latte for example?
 
Looks tasty enough, but where is the moisture?

Or is the chicken and rice moist enough without the requirement of a sauce of some kind?
 
I do something similar, but with streaky bacon, and the blue cheese made up into a sauce with cream and smothered on after cooking, will have to try the proscuttio route next time.
 
I did something kind of similar last night, except it was a "use up what's there" scenario. Flattened two chicken breasts, covered one side of each in cream cheese, seasoned with pepper and basil, rolled them both up (so that the cream cheese was on the inside) and wrapped them in three slices of bacon each. Baked for 45 mins at 175c, served with boiled carrots, peas and sweet corn.
