Chorizo and Pancetta Salad
You will need the following and some Extra Virgin Olive Oil and Balsamic Vinegar.
1. Put salad on plate
Slice the chorizo and tomatoes
Put the pancetta and chorizo into a pan and fry without any oil, then put some kitchen paper into a bowl and put the cooked chorizo and pancetta in it to soak up the fat and cool
Now the dressing, put some basil in to a pestle and mortar with some extra virgin olive oil and bash it a bit and put in some balsamic vinegar.
put in the chorizo and pancetta and olives, then season.
Then drizzle in the dressing and grate some parmesan on top to finish it off.
