cooling question

i have a fractal design define r3 case with standard fans. when i upgrade, my cpu will be a 3930K with an NH-D14-2011 cooler.

i prefer quiet computing so i'm tempted with a custom cooler on a 670 but am worried that will cause my system to overheat.

i think i have two choices:
1) get a reference cooler to blow the air out the back
2) add more fans to my case to keep it cool

so, for reference coolers are 680s quieter than 670s and is EVGA the brand to go for?

and for non-reference i was thinking an ASUS DirectCU. would just a 140mm side fan be enough on my case or should i look at the same at the top too?
