Core i7 or not :(

Really can't decide, I've can get an i7 rig for christmas, but its pretty expensive so I could get a lot of other stuff instead.

My current setup is E6600 / nForce 680i / 4GB 800Mhz DDR2. The new one would be Core i7 920 / Asus x58 P6T / 6GB 1600Mhz DDR3, at a cost of £720.

I've seen that GTX 280 SLI gains a lot from i7. The only thing is there doesn't really seem to be anything coming in the near future that really needs more power, but it's always good to upgrade.

Pointless upgrading when you don't need the extra power. When you do need the extra power the upgrade will be half the price, or you can spend the full amount on something even better.
 
The E6600 isn't a bad cpu, despite getting on a little. I'd wait for a later revision of the Core i7 if I were you, Intel will probably make them run cooler, more efficient and maybe tweak it in other ways. Stick with what you've got.

I was about to order mine on Tuesday, checked back weds and my build price had gone up by £100 :(

I would say hold out until after xmas for a late pressie or buy a top end C2D cpu and OC that mofo if you're mainly into gaming (I hope you are with that setup :p)
