Regarding my new build:

If I go
MSI P67A-GD65 Intel P67 (socket 1155) DDR3 Motherboard - (Sandybridge) ** B3 REVISION ** with FREE Coolermaster Hyper 212 Plus CPU Cooler

over
Gigabyte Z68X-UD4 Intel Z68 with Corsair A50 High-Performance CPU Cooler

Will there be much difference? It's a gaming machine with core i5 that I want to overclock to 4.4Ghz.

Regarding my old build:

Is it better to sell my Q6600, Mother Board, RAM, Artic Freezer pro in pieces or as an overclocked bundle?

Where do I find out how to sell on Overclockers UK MM? I cant find the thread.

You need 250 posts and I think a couple of other requirements to access the MM, there's a FAQ somewhere that explains it I think.

As for the motherboard, the P67 board should be fine. Have you got a SSD though, if you have I recommend going for the Asrock Extreme4.

You can't use the MM as you need 250 posts to see it. Best bet would be to sell them individually on the bay.

Bugger, beaten to it again.
 
Well I would expect to be going SSD in the future... sorry for my lazyness, but what is Asrock Extreme better if I decide to go SSD in the future? Is it just about boot times, because I'm not too bothered about that ;-)

Read this and see if you think the benefits are worth it. f you do, go for the one I linked if not, go for the P67 board.

I'm struggling to work out what QuickSync does. Does it just help with encoding videos and save money by switching to on-board when not in game?

The caching isn't really a big deal for me I think.

Yeah I think so. I'd say the SSD caching is the biggest selling point and if you're not bothered about it go for the P67, I just noticed it was on offer this week too so I'd definitely go for the P67 board.
