Hopefully a simple question - I have five years experience in my industry and I am looking to apply for a couple of senior roles. How long should a cover letter be for this sort of thing? I feel that one page is missing key information and I don't think I am waffling. The role / industry has a lot of different skills required from various technical skills to client liaison and project management which takes up a fair amount of space. I would also like to get some brief examples in there at this level.

Bullet points for a CV sure, I'm not sure I'd put them in a cover letter though.

OP: Just a subjective opinion but I'd say over 1 page is way too long and frankly half a page or so would probably be preferable in most cases. No one wants to read a big essay when they've got a bunch of other CVs/cover letters to go through. I don't think it is really necessary to duplicate what is already in the work experience part of your CV and then add expanded commentary on it.

When I sit on recruitment boards we bin cover letters that are longer than one page and CV's longer than two.
