cpu cores

I am in the process of sorting out which parts i need for my first pc build, but i have a question i hadnt thought of so far, my current pc is a I5 8600K and i run multiple things at once but after a while the cpu utilistion gets to 100% and programs crash and i am thinking of getting either 9800x3d or 9700x but wondered if this would still happen, not sure if i need more cores than my current pc (6 cores) or if i need to look at certain specs on the cpu's. hope someone can help thanks.

the ram is also being used fully, but i intend to increase the ram, running multiple browsers with multiple tabs and watching movies while moving files as well sometimes.

main function will be browsing and multitasking but will be playing latest games and older games as well.

current pc :
i5 8600k
16gb
1050 ti
only 2.5 ssd or older style hdd.

currently run a variety of browsers : vivaldi, brave, firefox, librawolf,opera, basilisk, duckduckgo, floorp.
budget is flexible ish £1800-£2200.
want to game at 1440p but not bought the monitor yet but will be 27"-28".
games i will be playing will be cyberpunk,football manager, gta v,wwe 2k25, elden ring, but will also be playing older games.
cpu's considering : 9800x3d,9700x,7900x.
