CPU Dilema

I have a HP XW6400 with 8Gb ram and 1Tb HD and i am going to get a 1 or 2 Gb Nvidia gfx card.
What i cannot figure out is which of these two sets of cpu's to get considering i want to do some HD video editing , play some flight sims like X-Plane and do some 3d graphics too.

The choices are :

2 x Dual core Xeon 5160 @ 3.0Ghz

Or

2 x Quad core Xeon E5345 @ 2.33Ghz

I have googled but some say get the dual cores and other say the quad cores and its about 50/50 so im really confused now ??

Can anyone help me please ?
 
To be honest they're both old hat 65nm CPUs which are very likely to be 'end of life' before long.

The E5345 you can probably find for 150 pounds new but is just about comparible to a Core i3. The 5160 I think has been out of circulation for some time but you might find one for 20 quid on ebay. They have comparible performance to something like a higher-end Core 2 Duo.

It wouldn't be hard to do much better with just one CPU by today's Sandybridge/Ivybridge parts but I guess it depends on your budget. Personally, I wouldn't be putting money into either of the parts you mention unless they were absolute bargains.
