CPU/MB/RAM for a s1156 system

Hi, I'm looking at getting a s1156 system and I'm looking for some advice on what CPU/MB/RAM to get. Now I know I've already got a respectable system (see sig) but I'm looking for something new. I intend to sell on the main parts of my S775 system to help fund the upgrade. The most tasking thing the system will do is gaming. So far I've come up with this:

Would an i5 750 be enough for gaming? Would I benefit from using an i7 860? Now I'm going to need a heatsink as no where seems to stock the 1156 bracket for the Prolimatech Megahalems, any suggestions? If there is anything that needs changing then please feel free to say.

Any suggestions for a heatsink guys? I do intend to use my Prolimatech when the bracket is eventually in stock but I'm going to need something in the mean time. How about the Scythe Ninja 2 http://www.overclockers.co.uk/showproduct.php?prodid=HS-024-SY&groupid=701&catid=57&subcat=1395 ?
Only thing I dislike about it is the push pin method of attaching it as it looks quite a big lump. Perhaps I should just get the retail i5 750 as that would have an adequate heatsink to run it at stock, just not sure how quiet it would be.
