CPU temperature sensor installation.

I've just got a new fan controller that features automatic control and I've been looking for a tutorial on how and where to install the sensor probes.Everything apart from the CPU sensor is pretty much self explanatory. But when it comes to the CPU probe, all I've found so far is idiots who think it should be installed between the CPU and Heatsink(!!!), some say on the side of the CPU and others say that it should be installed on the underside of the CPU, with the wires threaded through the pins. Seems like the best way to get accurate readings but there's so many risks involved that I'd be extremely hesitant to go this route.

So, fellow forum members... what's best practice when it comes to installing a temperature probe for measuring CPU temps? Do I even need the the sensor... could I just set the CPU heatsink fans to manual? Could I install it on the heat spreader on the back of the mobo?
