I noticed I don't have a cable from the pump containing the cpu_opt connection on the aorus warterfocre, this cable is vital how come there isn't one?

The pump connects via usb and sata power. CPU_OPT is just a fan header. You can use it for the fans or not.

Ok thanks my other fans are all pre connected to a fan hub which also connect to a usb header, so the cpu_opt and cpu_fan socket are now left empty. Just feels wrong after reading my mobo manual.

Your mobo manual assumes you're using a very basic stock cooler and can be ignored. I've ran systems for years without anything plugged into the motherboard fan headers without issue - some mobos complain that they don't think a cooler is connected by you can easily tell it ignore the issue.
