So my parents have some cm7s that they want rid of, however they are old person brown. Has anyone wrapped speakers black (either Matt or gloss) before? Any pitfalls?

Wrapping is deffo a possibility. Are the CM7 a real wood veneer?

Other considerations would be what happens to the resale value and whether the wrap can be removed without damage.

I'm unaware of any pitfalls, apart from others disagreeing with your choice in finish.
If you look on some of the more dedicated forums (e.g. the Wam, or Pinkfish), you'll see in there DIY areas what some people have done. Most seem to focus on returning the units to their pristine state, but there's no reason why you couldn't be more adventurous.
Perhaps more importantly is what finish you like. If I was doing it now, I've be more inclined to be a bit more adventurous, e.g. Ferrari red. For examples, go have a search on Meridian active speakers. They are sold in a variety of different colours and might give you a good idea of what speakers could look like.

ive wrapped everything from tables to lorries ,wrap vinyl is air release so its not too bad to put on , only thing to watch is if you need to stretch the vinyl you MUST kill the vinyl memory with heat (90c) or it WILL pop back

The tv stand is black and there is a bookcase thats pine so it needs to blend in a bit, also wife will complain if it sticks out (although not sure she'd be able to move them lol). Is there much of a market for old speakers?
