Creating a wooden surround in a bathroom, best methods?

In my new bathroom I got the builders to add a little cubby section behind where the door will open for storage.
The sides are a bit thicker than I wanted but it's fine. Inside that top area I'd like to put an oak backing and sides and hopefully it'll look like this.

I was thinking of using veneered plywood rather than MDF but what do you think would be the best way to ensure a nice tight fit to the sides with no gaps?
I would need the moveable shelves as well so will need to put small holes along the sides

The bottom section will eventually be a pull out laundry basket (hopefully)

Veneered ply should be fine (it's in a bathroom, seal it well) and then I'd frame the front of it with some solid oak to match with mitre joints. That will mean you don't have to fret about any undulations in the wall.
